WATCH: Summer’s not over yet! Make your own icy lemonade lollies!

In South Africa, we tend to have longer days this time of year, with higher temperatures, giving us plenty of time in the summer sun. And summer is far from over.

But we’ve got the perfect treat for those scorching hot days when the kids are desperate to cool down after school and the weekends you find yourself sitting on the porch late at night because it’s much too hot to be indoors: ice lollies!

Ingredients and tools

  • Ice lollies mould
  • For the rainbow lollies: blueberries, raspberries, mango and green grapes (or any other different colour fruits)
  • For the lemon lollies: mint and lemon slices
  • For the cola lollies: cola bottles and cola tonic cordial
  • Lemonade

Tips and tricks

  • When pressing your fruit into your mould, while you’d like them to fit in perfectly, don’t pack them too tightly. You won’t get enough lemonade in the mould if you do.
  • Be sure to cut your fruit up if it’s too big. We found we had to cut the mango up even smaller than we initially did and the grapes had to be cut up too. Remember that this doesn’t work with all fruits though – some, if they’re soft and contain a lot of liquid, might mix with your lemonade.
  • You can use various cordials. Try the lime, passion fruit or even the rose cordials. Similarly, you can add any solid ingredients to your moulds to make different flavours you know your family will love.
