WATCH: These rainbow cheesecake bake sale bites will make them the coolest kid in school!

With constant school fundraisers, bake sales and market days, our kids are always looking for something delicious and exciting to take to school. Well, these cheesecake bites are both!

It’s easy to make and transport to and from school. And the best part is, you can make it together.

Check out the video below then read the ingredients and tips and tricks on how to make these bake sale bites that will make your little one the coolest kid in school!

Ingredients

  • 200g crushed digestive biscuits
  • 60g melted butter
  • 460g plain cream cheese
  • 1 ½ cups icing sugar
  • 250ml whipped fresh cream
  • Blue, yellow and red food colouring

Tips and tricks

  • Line your baking tray with baking paper to make your mixture easy to remove and slice into blocks. Use melted butter to make sure it sticks.
  • We like to use digestive biscuits but you could use any biscuits. You can also add a little chocolate spread to the base mixture, which will help to hold it together. Be sure to press your biscuits in properly and run the back of your spoon into each groove. This will help the mixture to stick and stay together.
  • Divide the mixture evenly to see each layer. We would suggest using a smaller dish so that your layers are thicker and therefore more visible.
  • Make sure you give the cheesecake enough time to set and use a hot wet knife to slice through it. This will stop your layers from mixing together.
  • However, if your colours do mix, that’s okay. The kids will love seeing the different colours and be fascinated by this variant of the traditional cheesecake.
  • You can put the cheesecake bites into individual cupcake holders, making them easy to transfer to school and sell at a bake sale,vwhile taking them to the next level in pretty packaging.

Your kid will love you and all their friends will be lining up at their stall.
