How to make ice cream sandwiches

Raspberry madeira sandwiches

Ingredients

  • 1 Madeira loaf
  • 1 punnet raspberries
  • Vanilla ice cream, slightly soft

Instructions

  1. Line a loaf tin with clingwrap so that it hangs over the sides.
  2. Slice the Madeira loaf into 1cm thick slices and cover the bottom of the loaf tin with some of the slices.
  3. Spread vanilla ice cream over the cake and top with the raspberries.
  4. Add another layer of ice cream and then place the rest of the cake on top.
  5. Cover with the overlapping clingwrap and freeze until hard.
  6. Turn the loaf out onto a board or a plate and peel off the clingwrap.
  7. Slice the loaf into thick slices and place them on a plate. Freeze again until ready to serve.

Wafer biscuit and berry sorbet

Ingredients

  • 1 packet of vanilla wafer biscuits
  • 1 tub of berry sorbet, slightly softened

Instructions

  1. Line a loaf tin with clingwrap so that it hangs over the sides.
  2. Place a line of wafer biscuits on the bottom of the tin and top with a layer of sorbet.
  3. Finish off the loaf with another layer of wafer biscuits. Be sure to lay the biscuits down in the same direction as the bottom layer so that you can cut the sandwiches easily, between the biscuits.
  4. Cover the loaf with the overlapping clingwrap and freeze until hard.
  5. Turn the loaf out onto a board and slice between the biscuits. Place on a plate or in a dish and freeze until ready to serve.

Variations

  • Brownies with chocolate ice cream
  • Boudoir biscuits with thinly sliced strawberries, mint and berry sorbet.
