Healthy pitas

Instructions

  • 8 mini pita breads
  • 1 pillow pack lettuce
  • 8 tsps mayonnaise
  • 16 slices shaved, roast turkey or chicken
  • 2 eggs, hardboiled & sliced into rounds
  • salt & pepper to taste

Instructions

  1. Cut a slit into each pita bread.
  2. Spread a teaspoon of mayonnaise into each pita.
  3. Place a little lettuce, two slices of cold meat and a round of egg into each pita pocket.
  4. Wrap them into some wax wrap to keep them fresh and stop the filling from falling out inside the lunch box.

turkey or chicken, raisins and other dried fruit, mini oat cakes.


Bean salad with tortilla chips

Ingredients

  • 4 flour tortillas (we used wholewheat)
  • olive oil cooking spray
  • 1 can (410g) cannelini beans
  • 1 packet sundried tomatoes, diced
  • 2 spring onions, chopped
  • ¼ cup coriander leaves, chopped

Instructions

  1. Preheat oven to 200°C.
  2. Rinse the beans under cold running water.
  3. Place in a bowl and stir in the sundried tomato, spring onions and coriander leaves.
  4. Fork mash the beans a little for your child, if necessary, and set aside while you make the chips.
  5. Cut each tortilla into eight wedges. Arrange on a baking sheet and coat with cooking spray. Place in the oven and bake until crisp and golden brown (about 10 minutes). Transfer to a wire rack to cool.
  6. Pack the chips and salad into separate containers, so that the
    chips don’t go soggy before you get to dip them in the salad for lunch.
  7. Leave out the coriander if your toddler doesn’t like it. It is quite a strongly flavoured herb.

Low-fat oven-baked tortilla chips accompany this hearty low-GI salad that will keep you and your tot sustained till supper time


Peanut butter sushi

Ingredients

  • 4 flour tortillas
  • 8 tbsp smooth peanut butter (organic peanut butter is best if you can get it)
  • fresh banana and strawberry slices

Instructions

  1. Spread peanut butter on the tortillas.
  2. Place a row of banana slices next to a row of strawberry slices down the middle of each tortilla. Roll each one into a tube, pressing  gently.
  3. Cut them into bite-size pieces and pack into an airtight container.

This is much more exciting than a peanut butter sandwich – it is still rich in protein and it contains a portion of fruit!
