Best rainbow checkerboard cake ever!

My 5-year-old is addicted to My Cupcake Addiction – the fantastic Aussie Elise Strachan's baking channel on YouTube with the best cakes and decorations. She makes everything looks so easy that my preschooler has totally been bitten by the baking bug.

Here she shows what happens when you marry a classic checkerboard cake with a splash of rainbow.

And it's seems really doable, even for me. Key seems to be the kind of food colouring you use, as I've tried to make a rainbow cake before and all the colours came out a sad shade of grey. I've heard that gel colouring works best.

Best to watch the video for details, but here's the cheat sheet:

1. The ingredients:

2. Mix the food colouring and batter:

3. Pipe the batter into small round tins:

4. After baking, cut 3 circles out of every layer:

5. Mix and match:

6. Stack and ice!
