Bacon, cheese and spring onion muffins
These bacon, cheese and spring onion muffins are a healthy alternative to shop-bought snacks. Here's the recipe
- 800ml flour
- 20ml baking powder
- 5ml bicarbonate
- 5ml salt
- 5ml hot English mustard
- 3ml garlic powder
- 4 eggs, beaten
- 500ml buttermilk
- 1 cup cooked bacon bits
- 3 spring onions, chopped
- 1 cup grated Gouda cheese
- Combine all dry ingredients in a large bowl.
- Add eggs, buttermilk, bacon, spring onion, mustard and cheese and fold over lightly.
- Spoon mixture into wellgreased muffin tins and bake at 180ºC for 20-25 minutes.
