Bacon, cheese and spring onion muffins
These bacon, cheese and spring onion muffins are a healthy alternative to shop-bought snacks. Here's the recipe


  • 800ml flour
  • 20ml baking powder
  • 5ml bicarbonate
  • 5ml salt
  • 5ml hot English mustard
  • 3ml garlic powder
  • 4 eggs, beaten
  • 500ml buttermilk
  • 1 cup cooked bacon bits
  • 3 spring onions, chopped
  • 1 cup grated Gouda cheese


  1. Combine all dry ingredients in a large bowl.
  2. Add eggs, buttermilk, bacon, spring onion, mustard and cheese and fold over lightly.
  3. Spoon mixture into wellgreased muffin tins and bake at 180ºC for 20-25 minutes.
