Courgettes – also known as baby marrows or zucchini – are versatile and has many health benefits. Try this recipe for the whole family
1 cup (250ml) self-raising flour
3 eggs, lightly beaten
150g (4 or 5) courgettes, grated
2 rounds feta cheese, crumbled
1 tsp (5ml) paprika
¼ cup (60ml) parsley, chopped
¼ cup (60ml) mint, chopped
Olive oil for frying
- Mix flour & eggs in a large bowl until smooth. Add remaining ingredients and mix to combine.
- Place a few drops of olive oil in a non-stick pan and fry dollops of the fritter mixture until golden brown on both sides.
- Serve with grated cheddar cheese or make a more elaborate meal by serving with bacon and roast tomatoes or cream cheese and smoked salmon.
