You need:
- 500g fresh root ginger, grated
- 300g caster sugar
- 2 lemons, sliced and extra to serve
- Sparkling mineral water
Method:
- Place the ginger, sugar and lemon slices in a saucepan with about ½ cup of water. Bring to the boil and cook till sugar is dissolved. Take off the heat, leave to cool then push through a sieve.
- To serve, pour into a jug and top up with sparkling mineral water. Add extra lemon slices.
The root of the ginger has beenused to ease nausea and digestive problems. Some research shows thepotential for its use as a painkiller to treat arthritis, joint pain and muscle soreness.
