You'll need:
- 3 cups Oats
- 1 cup Cake flour
- ½ cup Oat bran
- 2 tsp Baking powder
- ½ tsp Ground cinnamon
- 1 cup Butter
- 1 cup Light brown sugar
- 2 Eggs, lightly beaten
- 1 tsp Pure vanilla extract
- 1½ cups Crimson raisins/dried cranberries
Method:
- Preheat the oven to 180ºC.
- Stir together oats, flour, oat bran, baking powder and cinnamon in a large bowl.
- Set aside while you cream the butter and sugar, using an electric beater (about 5 minutes).
- Mix in the eggs and vanilla.
- Reduce speed to low and add the oat mixture.
- Mix until just combined,then stir in the raisins or cranberries.
- Line a baking sheet with parchment paper, then roll spoonfuls of the mixture into balls and place on the baking sheet, spacing them about 2cm apart.
- Flatten the balls slightly.
- Bake for about 15 minutes until golden and just set.
- Remove from the oven and let the cookies cool slightly on the baking tray before using a spatula to transfer them to wire racks to cool.
