Oat and Raisin Cookies

You'll need:

  • 3 cups  Oats
  • 1 cup  Cake flour
  • ½ cup  Oat bran
  • 2 tsp  Baking powder
  • ½ tsp  Ground cinnamon
  • 1 cup  Butter
  • 1 cup  Light brown sugar
  • 2  Eggs, lightly beaten
  • 1 tsp  Pure vanilla extract
  • 1½ cups  Crimson raisins/dried cranberries

Method:

  1. Preheat the oven to 180ºC.
  2. Stir together oats, flour, oat bran, baking powder and cinnamon in a large bowl.
  3. Set aside while you cream the butter and sugar, using an electric beater (about 5 minutes).
  4. Mix in the eggs and vanilla.
  5. Reduce speed to low and add the oat mixture.
  6. Mix until just combined,then stir in the raisins or cranberries.
  7. Line a baking sheet with parchment paper, then roll spoonfuls of the mixture into balls and place on the baking sheet, spacing them about 2cm apart.
  8. Flatten the balls slightly.
  9. Bake for about 15 minutes until golden and just set.
  10. Remove from the oven and let the cookies cool slightly on the baking tray before using a spatula to transfer them to wire racks to cool.
