Big top cake
This big top cake is perfect for a circus-themed party. Here is how you make one


  • 2 x 25cm cakes
  • 1.5kg ready-made fondant (plastic icing)
  • powdered food colouring
  • 1 cake board
  • 1 egg white
  • flags
  • candy balls
  • candles


  1. Select your favourite cake recipe and bake 2 round 25cm cakes
  2. Knead your chosen colouring into the ready-made fondant and wrap tightly with plastic wrap. Keep one batch uncoloured
  3. Measure the height and circumference of the bottom cake. On a surface dusted with icing sugar, roll out the uncoloured white fondant to approximately 3mm thick. Using your measurements, cut a strip to cover the bottom cake. Lift fondant onto the cake and mould edges together. Place it on a board
  4. Place the second cake on top, mark the centre and cut half of the top cake diagonally to create a cone shape (the top of the tent). Cover the top half of the cake with a thin layer of plain fondant to form a base for the coloured strips
  5. Roll out the coloured fondant and cut even, scalloped strips to cover the top cake. Lift each strip onto the top of the cake, ensuring that they cover half of the bottom cake. Egg white can be used to stick the strips to the fondant layer
  6. Decorate with bright flags
  7. To make these festive candles, roll small fondant balls and press candy or balls down into them. Roll more little fondant balls for the top of the candy balls, to hold the candles. Place on the board around the bottom of the cake.


  • Cut a template from paper for the top of the tent to ensure that the shapes fit evenly around the cake.
  • Support the top cake by pushing wooden skewers into the bottom cake.
  • Get the right measurement by marking the skewers close to the top of the cake and cutting with a knife.
