Potato craters and alien ham

Ingredients

  • 250g potatoes
  • 1 egg, lightly beaten
  • Pinch of salt and pepper
  • 1/4 cup flour
  • 3 tbsps melted butter

Instructions

  1. Preheat the oven to 200ºC.
  2. Using a food processor or grater, finely shred the peeled potatoes. In a large bowl, stir together potato, egg, flour, salt and pepper to form a soft dough-like mixture. Spoon the mixture into 24 greased mini muffin tins.
  3. Using a spoon, push the grated potato up the sides to make a nest shape. Pour about ¼ teaspoon melted butter into each nest.
  4. Bake in the centre of the oven until golden and cooked through, about 15-20 minutes. Cool on rack.

For the alien ham filling

  1. Mix together chopped ham, basil and roasted mini rosa tomotoes with a dash of olive oil, salt and pepper.
  2. Top each potato crater with the filling.

Cheesy moon balls

Ingredients

  • 1/2 cup unsalted butter, softened
  • 2 punnets of cream cheese
  • 2 tbsps fresh lemon juice
  • 1/2 tsp Worcestershire sauce
  • 1/2 tsp coarse salt
  • 1/4 tsp freshly ground pepper
  • 1/2 cup finely grated cheddar cheese
  • 2 tbsps chutney
  • Finely ground biltong for coating
  • Finely chopped chives for coating

Instructions

  1. Put butter, cream cheese, lemon juice, Worcestershire sauce, salt, and pepper into the bowl of an electric mixer. Mix on medium speed until combined.
  2. Stir cheddar cheese and chutney into the mixture and refrigerate for an hour.
  3. Form into a small balls and, if not using immediately, refrigerate up to three days or freeze up to one month.
  4. Roll cheese balls into biltong or chives before serving. Serve with stargazer crackers.

Stargazer crackers

Ingredients

  • Soft tortillas
  • 1/4 cup thick soya sauce
  • 1/4 cup olive oil

Instructions

  1. Preheat the oven to 180ºC.
  2. Cut star shapes out of the tortillas with a cookie cutter.
  3. Mix the soya sauce and olive oil together in a bowl.
  4. Line a baking tray with nonstick baking paper.
  5. Brush the star shapes with the oil and soya mixture and place on the baking tray. Bake for about eight minutes until crisp.
  6. Turn the shapes over and brush the other sides before baking again.

Alien jelly

Ingredients

  • 2 pkts green jelly
  • Round jelly sweets
  • Cake decorating balls
  • Empty yoghurt punnets for moulds

Instructions

  1. Lightly grease the moulds.
  2. Make the first packet of jelly, using only one cup of hot water.
  3. Cool in the refrigerator until almost set.
  4. Gently push a sweet into the jelly.
  5. Make up the second packet of jelly and slowly fill the moulds to the top. Place in the refrigerator until set.
  6. Gently loosen the jellies and unmould them onto small plates.
  7. Decorate with the balls, using gel icing to fix them round the base of the jellies.

Meteorite honeycomb

Ingredients

  • 1/4 cup honey
  • 1/2 cup light corn syrup
  • 2 cups sugar
  • 1 generous tbsp baking soda
  • 1/4 cup water

Instructions

  1. Prepare a rimmed baking sheet by lining it with aluminum foil and spraying the foil with nonstick cooking spray.
  2. Combine the sugar, corn syrup, honey, and ¼ cup water in a large saucepan. Use a saucepan large enough that the mixture can triple in size and still be safely contained.
  3. Stir the ingredients together until the sugar is completely moistened. Using a wet pastry brush, wipe the sides of the saucepan to remove any stray sugar crystals.
  4. Insert a candy thermometer and cook the mixture over medium-high heat, without stirring, until the temperature reaches 150ºC.
  5. Once the candy is at the proper temperature, remove it from the heat and add the baking soda all at once. Immediately whisk the candy to incorporate the baking soda, and be careful – it will foam up a great deal!
  6. As soon as the baking soda is incorporated, pour the mixture carefully onto the prepared sheet.
  7. Allow it to cool and harden completely, then break it into small pieces.

Milkyway shake

Instructions

  1. Coat the inside of a glass with corn syrup and then sprinkle hundreds and thousands around the glass.
  2. Pour in your favourite milkshake.

Solar system fizz

Instructions

  1. Freeze blue energy drink in ice-cub trays. When ready to serve, crush the ice cubes and place in the bottom of frosted glasses.
  2. Top with lemonade.
