Ingredients
600g Butternut, peeled and cubed
1 onion, chopped
9g Butter
630ml Vegetable stock
8oml Heavy cream
Dash of Nutmeg
Dash of Ground cloves
Dash of Ground cinnamon
Salt & Pepper to taste
Method
1. In a large microwave safe dish combine the butternut, onions and butter. Cover and microwave on high for 4 minutes
2. Stir in the vegetable stock and cook on high for a further 20 to 25 minutes, or until the butternut is tender
3. Puree this mixture in a blender or food processor
4. Add the cream and salt & pepper
5. Microwave on high for another 3 to 4 minutes, or until heated through
6. Flavour with nutmeg, cinnamon and cloves to taste
Tip:
If you don’t have a blender or food processor, simply mash the butternut, onion and stock mixture until smooth.
