You'll need:
- 1 Onion, chopped
- 15ml (1tbsp) Butter
- 150g Spinach leaves, washed and torn
- 1 cup Cheddar Cheese, grated
- 180ml (¾ cup) Milk
- 6 Eggs
Method:
- Preheat oven to 200°C. Line a 20cm cake tin with silicone or parchment paper.
- In a large saucepan, fry the onion in the butter for a few minutes until golden brown.
- Add the spinach, turn down the heat and put a lid on the saucepan. Let the spinach steam for 5 minutes (no water needed). Take off the heat and let cool.
- In the meantime, beat the eggs and milk together.
- Stir the spinach mixture and cheese into the egg mixture. Pour into the prepared cake tin and bake for 20-30 minutes till set and browned on top.
- Take the tin out of the oven, leave to cool, then turn out onto a board and cut into squares.
