Mini meatloaf
These mini meat loafs are a perfect lunch box snack and you can freeze them and use it at another time as well. 

What you need:

  • 250g mince 
  • ½ onion, grated 
  • 2 tsps oat bran 
  • 1 egg, lightly beaten 
  • 1 tbsp parsley, chopped 
  • ¼ tsp ground cloves 
  • 2 tbsp tomato sauce 
  • salt and pepper to taste 

What to do:

  1. Preheat oven to 180ºC.
  2. Mix together the mince, onion, oat bran, egg, parsley, ground cloves, salt and pepper.
  3. Spoon heaped teaspoonfuls of this mixture into the cups of a 12-cup mini muffin tin. Brush the top of each mini loaf with a little tomato sauce. 
  4. Bake for 30 minutes. Remove from oven, allow to cool and pack a couple into your child's lunch box. You can freeze the rest to be used at another time.
