Ingredients:
6 cups Popcorn
1 tbsp Butter
1½ cup (375ml) Light brown sugar
1/3 cup (80ml) Water
Method:
1. Place popcorn in a metal or pyrex container (not plastic) and set aside.
2. Melt butter in a heavy-based saucepan. Add sugar and water and stir over moderate heat until dissolved. Increase heat and boil for 20 minutes (till softball stage or 120°C on a candy thermometer).
3. Remove from heat and pour over popcorn. Stir to coat and decant onto greased wax paper or a silicone mat. Once cooled you can break the kernels apart.
