Versatile mince sauce

You will need:

  • 1 tbsp olive oil 
  • 1 onion, chopped 
  • 1 garlic clove, crushed 
  • 1 carrot, peeled and grated 
  • 2 baby marrows, grated 
  • 1 celery stick, finely sliced 
  • 500g lean beef mince
  • 1 tin chopped tomato
  • 2 tbsp tomato paste 
  • 1 tbsp fresh thyme, chopped 

What to do:

  1. Heat the oil in a heavy-based saucepan and lightly fry the onion. Add the rest of the vegetables and fry for five minutes over medium heat. 
  2. Remove the vegetables and fry the meat till browned. Add the vegetables back into the pot. Add the tinned tomato, tomato paste and thyme. Lower the heat, put a lid on and simmer for 25 minutes. 
  3. Remove from the heat and blend with a hand blender until the sauce has a smooth texture.
